    meatloaf

Meatloaf might not be the fanciest (or prettiest) meal to serve, but it’s always been one of our favorite easy weeknight meals. I came up with this healthful turkey meatloaf recipe for the “Something Bold, Something New: Meats, Poultry, and Seafood” section of our cookbook, and my husband declared it even tastier than the ultra-fatty version I used to make at home (ground duck and sausage, topped with bacon.) That’s saying a lot, coming from a guy like him! The secret to this super-moist meatloaf is a lot of vegetables, and fragrant spices like cumin and fennel seed. I used just half a seeded jalapeno for a bit of kick, but that’s an optional ingredient. The spices give you a lot of flavor without the added calories and fat. The glaze is a tangy-sweet blend of Worcestershire sauce, ketchup, and balsamic vinegar. This is one of those recipes I can see myself making again and again–in fact, we kind of fought over the leftovers this morning (he thought I ate more than my fair share), so I think my husband will be asking me to make it again very soon!

I made a turkey meatloaf last week and both Jennifer and Madeline said it was better than my regular beef one. I gotta say, it was pretty dang good. Maybe there is something to this turkey meatloaf thing. ;) I thought I might not end up using the three-pack of turkey from Costco, but I’ll definitely be making more turkeyloaf.

I was surprised how good it was too! You know my tastes…fatty sausage > lean ground turkey. But this was so moist and yummy. I didn’t even miss the sausage and bacon!

That looks so good – I love the idea of the cumin along with the chili.

I use ground turkey to make some really yummy asian-inspired turkey burgers – I don’t even miss beef burgers now. :-D

Hey Jeni! Funny you mention beef, that’s what my husband said when he finished eating: “You could’ve told me it was beef and I wouldn’t have suspected a thing.” The meatloaf was definitely very hearty for being so lean.

It’s strange to confess, as much as I love my beef/pork sausages, I’ve been really into turkey sausages lately – they’re so much more flavourful and yummy (meaning it’s easy to have 5+ portions at a time). Ironically the increased serving sizes consumed still equate to less calories and fat than the regular stuff… and I can still sneak in those strips of fatty bacon without feeling guilty!

(But I still want to try your bacon-wrapped-bacon!)

Made more turkey meatloaf tonight, but did not know I only had half an onion until I had started. Ended up supplementing with finely chopped apple. Sounds odd, but it came out awesome! Subtle sweetness, a little bit like apple in Thanksgiving stuffing. Give it a try if you decide to make turkey meatloaf again.

I think this write up was really a sweet start to a potential series of write ups about this topic. A lot of users pretend to understand what they are writing about when it comes to this stuff and in reality, nearly no one actually get it. You seem to grasp it however, so I think you should start writing more. Thanks!
