    I have to confess: I do not love vegetables. I am not one to order a salad when we dine out, nor do I enjoy digging into a big plate of greens at home. It’s not so much that I have an infantile dislike of all vegetables. It’s just that given the choice, I would much rather eat a nice slab of richly marbled steak or enjoy a too-large piece of cake than suffer through a pile of sad greens. It takes a lot for me to eat a vegetarian dish and enjoy it, so I’m glad to say I’ve found one!

    This roasted broccoli, mildly spicy from a few red chili flakes, and extra crunchy with a dusting of buttery panko, is healthful and tasty. It’s so good I can eat an enormous plate of it, and relish each crunchy, garlicky bite. This recipe will be featured in our “Losing the Newlywed 15: Healthful Vegetarian Dishes”, and is very simple to prepare. Just toss some broccoli florets with minced garlic, olive oil, salt, pepper, and throw the pan in the oven for 20 minutes at 400 degrees. Brown the panko with a bit of butter or olive oil on the stovetop (you can throw in a few herbs or a squeeze of lemon if you’d like.) That’s it!

    Oh, like you, I get no excitement whatsoever from salads and raw vegetables. But a well cooked vegetable…mmmmmmm. Love ‘em!

    oh wow—I promise I can make you love vegetables. Come over and garden with me sometime (aka pull things from the ground) and I’ll whip together some Indian goodness.

    Hey, I make this exact same thing! It’s delicious. I usually toast the panko in the oven while it is preheating, then toss it all together and back in the oven.

    This looks so freaking good! I am a lover of vegetables–I always joke that my #1 favorite food is cake, and #2 is brussels sprouts. Personally I love the recipe for brussels sprouts that is in Ruth Reichl’s book — I believe it’s Garlic and Sapphires. Even my husband who does not love veggies likes that one! Enough oil and it will make a nonveggie person a believer!
