		<description>I&#039;m so excited about making this soon. I scored a huge bag of nettles at the market on the weekend and I just love them so much I&#039;m always trying to come up with new ways to use them. I&#039;ve made a similar risotto with pureed spinach before and I love the combination of the greens with the creamy rice, but I never thought about using nettles! They do indeed taste of spring. So far my favourite is a ricotta nettles ravioli, but this looks like a contender for a regular dish!</description>
